Oyster Fritters


1 c. chopped drained oysters
4 eggs, separated
1/8 tsp. pepper
1/2 tsp. salt
6 tbs. flour
1 tbs. minced onion

Beat egg yolks until thick and creamy.
Add onions, salt and pepper,
then flour (a little at a time).
Fold in oysters and stiffly beaten egg whites.
Drop by spoonfuls in hot fat.
Serves 5.
