Pat's Squash Souffle


3 c. mashed, cooked winter squash
4 tbs. butter
2 tbs. brown sugar
1/2 tsp. salt
1/2 tsp. grated orange peel
1/8 tsp. ground nutmeg
dash pepper
4 egg yolks
4 egg whites

In large mixing bowl, combine squash, butter, brown sugar,
salt, orange peel, nutmeg and pepper.
Beat till fluffy. Add yolks; beat well.
Beat whites till stiff peaks form;
carefully fold in squash mixture.
turn into 6-cup souffle dish.
Bake souffle in 350° oven, 55-60 min.
Serves 8-10.
