Penne Pasta with
Spinach, Tomato and Feta



10-12 oz. Penne Pasta
1 bag frozen spinach
1 14.5 oz. can premium diced tomatoes
1/4 cup chopped green onions
1 T (or more) extra virgin olive oil
4 oz. crumbled Feta Cheese

Cook Penne Pasta al dente. Meanwhile
microwave spinach with a little water
until fully heated.
Drain as much liquid as possible.
Add tomatoes, olive oil, green onions,
and a good grating of fresh ground black pepper.
Heat thoroughly in microwave. Toss with
hot pasta adding additional olive oil if desired.
Crumble feta cheese and toss again. Serve.
