Perfection Salad

2 env. unflavored gelatin
1 c. cold water
1 1/2 c. boiling water
1/2 c. sugar
1/2 c. cider vinegar
2 tbs. fresh lemon juice
1 tsp. salt
1 1/2 c. finely shredded cabbage
1 1/2 c. chopped celery
1/4 c. diced green bell pepper
1/4 c. chopped pimentos
Salad greens (optional)
Sprinkle gelatin over cold water in a
large heat-proof bowl; let stand 1 min.
Add boiling water and stir until gelatin
dissolves completely, about 5 min.
Stir in sugar, vinegar, lemon juice and salt.
Chill, stirring occasionally, untl mixture is
consistency of unbeaten egg white, 45-50 min.
Fold in cabbage, celery, green pepper and pimentos.
Turn into a 6-cup mold or bowl and chill 3 hours
or until firm. Unmold on serving platter and garnish,
if desired, with salad greens. Serves 6.
