Sally's Pimento Cheese Canapes

6 oz. pepper jack cheese, grated
6 tbs. unsalted butter, room temperature
3 tbs. diced, well-drained pimentos, divided
salt to taste
pinch of cayenne pepper
tobasco sauce to taste
Preheat broiler.
In a food processor, process cheese
and butter until smooth.
Add half the pimentos and
process until smooth.
Transfer mixture to a bowl
and fold in remaining pimentos,
salt, cayenne and Tobasco sauce.
Divide pimento cheese evenly
to spread on base of choice.
Place on baking sheet and
broil 4" from heat source
until bubbly, about 1 min.
