Pineapple and Sausage Oven Pancake

1 cup flour 1 tablespoon sugar 2 teaspoons baking powder 1/4 teaspoon nutmeg Salt to taste 2/3 cup milk 1 egg, lightly beaten 1 tablespoon melted butter or margarine 1 can sliced pineapple(8-ounce) drained, chopped 8 ounces brown-and-serve sausage links, cut lengthwise into halves 1 tablespoon sugar 3/4 teaspoon cinnamon Mix flour, 1 tbs. sugar, baking powder, Nutmeg and salt together. Whisk milk, egg and butter in bowl until blended. Add flour mixture, stirring just until moistened. Stir in pineapple. Spoon into greased 8x12" baking dish. Arrange sausage over top. Sprinkle with mixture of 1 tbs. sugar and cinnamon. Bake at 400F for 18-20 minutes or until set. Cut into squares. Serve immediately. Yield: 6 servings. |
