Popover Pancakes


3 eggs
2/3 c. flour
1/4 tsp. salt
1 tbs. sugar
1/2 c. milk
4 tbs. melted butter
1 tsp. grated lemon peel
1 reipe banana filling

Beat eggs; add dry ingredients alternately
with milk. Stir in 2 tbs. butter and lemon peel.
Heat two 8" cake pans in 400F oven for 5 min.
Remove from oven; place 1 tbs. of
remaining butter in bottom of each pan.
Divide batter between two pans and
bake at 400F for 18-20 min. or until fluffy
and golden brown. Remove from oven;
slide pancakes onto large platter.
Spoon half Banana Filling down center of
each pancake like an omelet.
Cut pancake in half and serve. Serves 4.

Banana Filling:
Melt 1/3 c. butter in skillet.
Stir in 1/3 c. brown sugar and
1/3 c. orange juice.
Heat until sugar dissolves.
Peel and slice three bananas.
Add to sauce, heat but don't boil.
Fill pancakes.
