Potato Farmer's Breakfast


1/2 lb. bacon
3 c. cooked potato, cubed
1 c. onion, chopped
2 tbs. fresh chives, chopped
6 eggs, beaten
1/4 tsp. salt
1/2 tsp. pepper
1/4 c. grated Cheddar cheese
In a large skillet, fry bacon; drain. Add potato,
onion and chives and cook 5 min. Stir in eggs,
salt and pepper. Sprinkle with grated cheese,
over the pan and cook over medium heat
until eggs are set, about 5 min. longer.

Remove pan from the heat and
cut into wedges Serve hot.
Makes 6 servings.
