Rice Pudding


3 1/2 c. milk, scalded
1/4 c. uncooked rice
1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla extract
1/4 tsp. ground nutmeg

Heat oven to 325°.
Combine all ingredients in a greased 1-qt. casserole.
Bake uncovered for 2 hours.
When pudding has baked about 30 min.,
stir in brown crust that forms on top of pudding.
Repeat stirring at half-hour intervals.
Bake pudding without stiffing the last half hour.
Serve pudding warm. Makes 6 servings.
