Rice Salad Ole`


1 c. cooked chicken (cut in thin strips)*
2 tbs. vinegar
2 c. cooked rice
1/4 c. minced onion
2 tbs. oil
1 tsp. Salt
1/2 tsp. hot pepper sauce
2 tomatoes, peeled, seeded and diced
1 small head lettuce, shredded
2 c. corn chips
*a 7-oz. can chunk tuna, drained, may be substituted

In serving bowl, toss together chicken, rice, onion,
oil, vinegar, salt, hot pepper sauce, tomatoes and lettuce.
Cover and chill thoroughly.
At serving time, add corn chips and
toss lightly. Makes 6 servings.
