Salisbury Steak


2 tbs. salad oil
5 med. onions, sliced
3 tbs. soy sauce
1/2 tsp. sugar
1 tbs. cornstarch
1 1/2 lb. ground beef
1 tsp. salt
1/4 tsp. pepper

40 min. before: In 10" skillet over medium heat,
in hot salad oil, cook onions 2 min., stirring occasionally.
Add soy sauce, sugar and 1 1/2 c. water; heat to boiling.
Reduce heat to low; simmer, uncovered 15 min. or until onions are tender.
In cup, stir cornstarch and 1/4 c. water until blended.
Gradually stir into onion mixture; cook, stirring constantly,
until sauce is thickened; keep warm.

Meanwhile, in medium bowl, mix ground beef, salt and pepper;
shape into four 1" thick patties.
Place patties on rack in broiling pan; broil 4 min. on each side for rare
or until of desired doneness.

To serve, arrange patties on warm platter;
spoon some onion mixture on top of each.
