Sandy's Scones


2 c. self-rising flour
1 oz butter
1/2 tsp. salt
3/4 c. milk and water mix
1 tsp. sugar

Stir flour and salt into a basin, stir in sugar.
Rub in butter until mixture resembles fine bread crumbs.
Pour nearly all the liquid in at once and mix to a soft dough.
(Flours vary in the way they absorb liquid:
if the mixture isn't soft enough, add the remaining liquid)

Place on a lightly floured surface and knead lightly.
Press dough out to about 3/4" of an inch in thickness
and , using a 2" cutter, cut into rounds.

Place on lightly greased oven tray
or into a lightly greased 11x7" lamington tin,
glaze with a little milk.

Bake in very hot oven for 10-12 min. or until golden.
Makes about 12.
