Sausage Potato Pancakes


one 6-oz. pkg. potato pancake mix
salad oil
one 8-oz. brown and serve sausage
maple blend syrup

Prepare one envelope from pancake mix and let stand as label directs.
Meanwhile, cook sausage as label directs; drain on paper towels.
Cut sausage into bite-size chunks and stir into potato-pancake batter.

Brush electric griddle or skillet generously with oil. Preheat to 390°.
Drop batter by tablespoonfuls, a few at a time onto griddle;
cook batter until underside is golden.
With pancake turner, turn and cook other side until light brown.
Remove to heated platter. Repeat until all batter is used.
If you like, use syrup. 4 servings.

(Use skillet or griddle on range top and preheat over medium heat
until a drop of water sizzles.)
