Savory Dried Berry Sauce


1/4 c. firmly packed light brown sugar
1 tbs. cornstarch
1 c. dry white wine
1/2 c. chicken broth
1 tsp. balsamic vinegar
1/2 c. dried cranberries or dried cherries
1/8 tsp. dried tarragon, crumbled
1/4 tsp. salt (optional)
2 tsp. minced fresh parsley PLUS
sprigs for garnish

In a small saucepan, whisk together brown sugar
and cornstarch; add wine and broth,
whisking until mixture is smooth.
Add balsamic vinegar, dried berries OR
cherries, tarragon and salt, if desired.
Simmer, stirring occasionally, for 15 min.
Stir in minced parsley and simmer for 1 min. more.
Makes about 1 1/4 c.
Serve hot with pork chops, ham or poultry.
Garnish with parsley sprigs.
