Scallop Delight


2 pkg. Louis Kemp Scallop Delights
1/4 c. dry sherry
1/4 c. margarine
1 bunch green onions, chpd.
6-8 oz. canned mushrooms, sliced and drained
1/2 c. bread crumbs
2-3 tbs. butter, melted
salt to taste
cayenne pepper to taste
1/3 c. grated Monterey Jack cheese

Place Scallop Delights (or any of the seafood delights) in bowl with sherry.
In medium saucepan, saute' mushrooms and green onions in butter
over medium heat until onions are tender.
Spread sauteed mixture in a small baking dish.
In a small bowl, mix salt, cayenne, melted butter and bread crumbs.
Sprinkle 1/4 c. bread crumb mixture over the sauteed mixture.
Top with scallops (and sherry);
cover scallops with remaining bread crumbs and then cheese.
Bake at 350° for 10-15 min. or until bread crumbs are lightly browned.
