Shrimp Casserole


1 stick butter
2 ribs celery, chopped
1/2 C parsley, chopped
4 slices wet bread
2 C cooked rice
1 bell pepper, chopped
5 cloves garlic, chopped
1/2 C pimento
1/4 C mashed crackers
1 can mushroom soup
1/2 C water
1 onion, chopped

Saute` onion, bell pepper, garlic, and
celery in butter for 15 mintues.
Mix in another bowl the soup,
pimento, parsley and shrimp.
Combine with onion mixture and
saute` 5 minutes longer.
Add broken up bread, rice and water.
Salt and pepper to taste.
Top with dry bread crumbs;
bake at 450F for 30 minutes.
