Shrimp Rarebit


1 lb. med. shrimp, cooked in shell
3 tbs. butter
3 tbs. flour

1 tsp. Worcestershire
1/4 c. dry white wine
1/2 tsp. dry mustard
1/8 tsp. Paprika
1 1/2 c. heavy cream
1 1/2 c. grated Cheddar cheese
1 c. grated Swiss cheese
¼ c. white wine

Peel and devein shrimp. Set aside.
Place butter in 4 c. measure.
Cook at high 40-45 sec. or until melted.
Stir in flour, worcestershire, mustard and paprika.
Add cream; stir until smooth.

Cook at high 2-4 min., or until thickened, stirring once.
Add cheese and wine; stir to blend.
Cook at med.-high (70%) 3 min., stirring once. Add shrimp.
Cook at med.-high 1-3 min. or until heated through.

Serve over toast points or in patty shells. Serves 4.
