Shrimp Scampi


2 lb. Large, raw, unshelled shrimp
1 c. melted butter
½ c. EACH: olive oil, dry vermouth
1 tbs. minced garlic
1 tsp. Salt
1/ 2 tsp. White pepper
2 lemons, juice only
¼ c. EACH: finely chopped green onions including tops;
grated Parmesan cheese

Wash shrimp well.
Leaving last segment of tails intact, remove shells.
Devein and rinse again. Pat dry and set aside.
In blender, combine butter, oil, vermouth, garlic,
salt, pepper and lemon juice.
Cover and blend on high for 10 seconds.

In large, shallow, oven-proof serving dish,
arrange shrimp in an attractive pattern.
Pour batter mixture over shrimp
and let stand at room temperature for 1 hour. Place dish in broiler 3-4 min.
Turn shrimp over and broil until firm to touch,
1-2 min. more. Total cooking time is 6-8 min.
DO NOT OVERCOOK. Serves 4-6.
