Sour Cherry Holiday Salad


2 EACH: lemons, oranges
1 tbs. unflavored gelatin
1/4 c. cold water
2 (4 oz) size pkg. black cherry-flavor gelatin
1 c. boiling water
1 scant c. sugar
1 (15 oz) can EACH: undrained sour cherries,
crushed pineapple
1/2 c. chopped pecans or other nuts

Grate rind (colored part only) from 1 lemon and 1 orange;
set rind aside.

In a bowl, sprinkle unflavored gelatin over cold water
and let soften. Place flavored gelatin in a bowl
and add boiling water. Stir in sugar, softened gelatin mixture,
juices and rinds. Chill in refrigerator until it begins to set.
Remove from refrigerator, stir in cherries, pineapple and
nuts and spread mixture in a 9x13" glass baking dish.
Cover and refrigerate.
Makes 12 servings.
