Spaghetti ala Checca Armando's


In a bowl, combine 4 tomatoes,
peeled, seeded and chopped,
1 lb. mozzarella cheese, diced,
1/4 c. minced fresh basil and
2 garlic cloves, crushed.
Toss the mixture with 1 1/3 c. olive oil and
add salt and pepper to taste.
Let the mixture stand, covered,
at room temperature for 30 min.
Toss it with 1 lb. spaghetti,
cooked and drained, and
serve the dish immediately.
Pass freshly grated Parmesan cheese.
Serves 4.
