Spanish Rice

4 tbs. shortening
1 c. onion, chopped
2 cloves, garlic, chopped fine
1 c. uncooked rice
2 c. cooked tomatoes
1 c. water or consomme'
1 c. pimiento, chopped
1 tsp. paprika
2 tsp. salt
1/4 tsp. pepper
Place shortening in skillet.
When hot, add onion and garlic and cook to a light, golden brown.
Add rice, tomatoes, water or consomme', pimiento and seasonings.
Stir until ingredients are well blended. Cover.
When mixture reaches steaming point, reduce heat to simmer setting.
It may be necessary to add more water.
Cook until mixture has thickened and rice is tender.
