Spiced Mixed Nuts

3 c. unsalted mixed nuts
1 egg white
1 tbs. orange juice
2/3 c. sugar
1 tbs. grated orange rind
1 tsp. Cinnamon
1/2 tsp. EACH: ginger, allspice
1/4 tsp. Salt
Preheat oven to 275F.
Place nuts in a large bowl and set aside.
In a small bowl, beat egg white, juice, sugar,
rind, cinnamon, ginger, allspice and salt.
When well mixed, pour over nuts and
toss until thoroughly coated.
In a large, shallow pan, spread nuts in
a single layer so that they do not touch.
Bake, stirring every 15 min.,
until nuts are lightly browned and crispy,
45-55 min. Cool completely and store in an
airtight container. Makes about 5 cups.
