Sugar Dipped Applesauce Mini-muffins


Muffins:
1/2 c. EACH: butter (room temperature), sugar
2 eggs
3/4 c. applesauce
1 3/4 c. flour
1 tbs. baking powder
1/2 salt

Topping:
1/2 c. sugar
1/2 tsp. ground cinnamon
1/4 c. butter, melted

Lightly grease 36 miniature muffin cups.
Preheat oven to 425F.

Muffins:
In a medium bowl, beat softened butter with sugar.
Beat in eggs until batter is light,
then stir in the applesauce.
In a small bowl, whisk together flour,
baking powder and salt. Stirring only until
dry ingredients are moistened, add to batter.
Spoon batter into prepared cups and bake
in preheated oven until tops spring back
when pressed lightly, 12-15 min.

Topping:
In a small dish, mix sugar and cinnamon.
While muffins are still warm,
dip tops in melted butter and then into cinnamon sugar.
Serve warm. Makes 36.
