Sunshine Muffins


8 1/4 ounce can crushed pineapple
Milk
1 1/2 c. packaged biscuit mix
3 tbs. sugar
1 beaten egg
1 tbs. sugar
1 tbs. finely shredded orange peel
Drain pineapple, saving syrup.
Add enough milk to syrup to make 3/4 c. liquid.
Combine packaged biscuit mix and
the 3 tbs. sugar.
Mix egg, the syrup mixture and
1/4 c. of the pineapple;
add all at once to the dry ingredients.
Stir just till moist.
Grease muffin cups or line with
paper cup liners, fill 2/3 full.
Combine remaining pineapple, 1 tbs. sugar
and orange peel.
Spoon about 1 tbs. over each muffin cup.
Bake at 400F for 20-25 minutes. Makes 8-10
