SUPER ZUCCHINI CASSEROLE


6 cups sliced zucchini
8 oz package of stuffing
1/4 cups onion
1 cup grated carrots
1 cup sour cream
1/4 cup butter or margarine
1 can cream of chicken soup

Saute zucchini and onions until tender in butter (1/2 hour).
Fold in sour cream, carrots and soup.
Pour into baking dish, top with stuffing
and bake for 1/2 hour at 350F.
Vegetable or side dish for 8 - 10.
