Sweet Pickle Chunks

10 med. cucumbers (5 lbs)
8 c. sugar
4 tsp. Salt
4 c. vinegar
2 tbs. mixed pickling spices
Cover whole cucumbers with boiling water; let stand overnight.
Drain. Repeat for 3 more days.
On 5th day, drain and cut into bite-size chunks.
Combine remaining ingredients;
bring to boiling and pour over cucumber chunks.
Cover and let stand for 2 days.
Then, bring mixture to full boil; fill hot,
scalded jars to 1/2" of top. Adjust lids.
Process in hot water bath for 5 min.
(start timing as soon as jars are placed in water).
Makes 9 pints.
