Sweet Potato Biscuits


3 c self-rising flour
6 T of lard or crisco
1/2 c sugar
1/2 c half and half
1 c cooked sweet potatoes, mashed

In a large bowl, mix together the lard, half and half, sugar, and sweet potatoes.
Gradually add flour until it can be kneaded lightly in the bowl.
Pinch off dough and form into little biscuits
(the less you handle the dough the better),
or you can roll and cut with a biscuit cutter.
Place in pan or on cookie sheet and bake in preheated 425° oven for 8-12 min.
or until golden brown.
