Tapioca Pudding


3 tbs. quick-cooking tapioca
dash of salt
5 tbs. sugar, divided
2 c. milk
2 eggs, separated
1 tsp. vanilla

Mix tapioca, salt, 3 tbs. sugar, milk and
slightly beaten egg yolks in heavy-bottomed pan.
Let stand 5 min. Cook over med. heat,
stirring, for 6 min., or until mixture comes to full boil.
Remove from heat. Beat egg whites until foamy,
then slowly beat in remaining 2 tbs. sugar.
Beat until stiff. Slowly stir into hot tapioca,
then add vanilla. Makes 4 servings.
