Tomato Onion Hush Puppies


1 (7 oz) pkg. hush puppy mix
1 egg
2/3 c. buttermilk
1/2 c. chopped onion
1/2 c. chopped tomato
vegetable oil

Combine all ingredients except oil
in a med. bowl; stir until smooth.
Set aside for 5 min.

Pour oil to depth of 3" into a Dutch oven;
heat to 375°. Carefully drop batter
by rounded tablespoons into hot oil,
a few at a time 2 min. or until golden brown,
turning once. Drain well on paper towels.
Serve immediately. Yield: 2 dozen.
