Ultimate Tuna Sandwich


1 (8") french roll or half a french baguette
1 1/2 tsp. olive oil
1/2 c. chopped leaf lettuce
1 (3 1/4 oz) can water-pack tuna
1 hard-cooked egg, sliced
6 thin slices cucumber
1 small tomato, cored, halved vertically, then sliced
1 thin slice red onion, separated into rings
4 salt-cured olives, pitted
salt and pepper

Cut bread in half lengthwise, scoop out insides, leaving 1" shell.
Drizzle bread with olive oil, spread lettuce evenly over bottom half.
Set aside half of tuna for anothre use.
Arrange remaining tuna over lettuce,
top with alternating slices of egg, cucumber, tomato and onion.
Sprinkle with olives, salt and pepper.
Cover with top bread slice, wrap tightly and
refrigerate several hours or overnight.
