Virginia House Sauterne Cooler

3 1/4 fifths Sauterne (Roma)
2 c. sugar
2 c. lemon juice (about 8 lemons)
1 c. brandy (Captain Apple Jack)
1 qt. seltzer water (club soda)
Make syrup with sugar and 1/2 c. water.
Mix all ingredients and allow to rest
or ripen for about an hour.
Then serve in tall glasses half filled
with shaved ice and decorated with
fruit and mint sprigs or serve in a punch bowl
with fruit frozen into an ice ring.
May be made 4-5 days in advance
without sparkling water. Serves 40.
