Vidalia Deep Dish


2 c. rice, cooked in 2 c. water, drained, and set aside
1 1/2 to 2 Vidalia onions, chopped
1/2 c. butter
2 TBS. fresh minced parsley
1/4 tsp. salt
1/4 tsp. white pepper
1 c. grated Swiss cheese
1 c. whipping cream
paprika

Melt butter, add onions, and cook 15 minutes. Stir in rice.
Mix in rest of ingredients except paprika.
Spoon into buttered 13x9x2 inch baking dish.
Cover and cook at 350 for 30 minutes.
Sprinkle lightly with paprika.
