Vermont Biscuits


2 c. all purpose flour
1 tbs. baking powder
1 tbs. sugar
1/2 tsp. salt
1/3 c. shortening
1 c. milk
1/4 lb. extra-sharp Cheddar cheese,
shredded (1 c.)

About 20 min. before serving:
Preheat oven to 450F.
In medium bowl, mix flour, baking powder,
sugar and salt. With pastry blender,
cut in shortening until
mixture resembles coarse crumbs.
With fork, stir in milk and cheese
just until mixture forms soft dough
and leaves side of bowl.
Drop dough by 1/3 cupfuls, about 1" apart,
onto ungreased large cookie sheet.
Bake 10-12 min. until golden.
Makes 8 biscuits.
