3 eggs
1 1/2 c sugar
1 c. oil
1 tsp. vanilla
2 c all-purpose flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1 c. chopped walnuts
4 c thinly sliced peeled tart apples
cream cheese icing
Beat eggs until fluffy.
Slowly add sugar, beating until thick and lemon colored.
Add oil and vanilla.
Combine flour, cinnamon, baking powder and salt;
mix into egg mixture. Stir in walnuts.
Arrange applies in bottom of greased 13 x 9 inch baking pan.
Pour batter into pan and spread to cover apples.
Bake at 350° for 60 min
or until cake tester inserted in center comes out clean.
Cool. Spread with cream
cheese icing. Chill if desired. Makes 1 cake.
Cream cheese icing:
2 pkgs (3 oz each) cream cheese, softened
1/2 c butter or margarine, softened
2 c confectioner's sugar
1 t lemon juice
Beat together cream cheese and butter until fluffy.
Beat in sugar and lemon juice until smooth enough to spread.
