Yams Cointreau


4 lg. yams or sweet potatoes, unpeeled (about 3 1/2 lb)
1/4 c. Cointreau
1/4 c. butter, melted
1 tsp. salt
1/8 tsp. pepper
Garnish: chopped fresh parsley

Cook yams in boiling water to cover 30 min. or until tender.
Drain and let cool to touch; peel.
Mash yams; stir in Cointreau and next 3 ingredients.
Garnish, if desired. Yield: 6-8 servings.
