ZUCCHINI HASH BROWN CASSEROLE
|
1/4 cup melted butter
2 tsp. dried chives
3/4 tsp. paprika
1 tsp. tarragon
1+ 1/4 tsp. salt
(separated to 3/4 tsp. and 1/2 tsp.)
1 pkg. (24 oz) frozen hash brown squares
1/4 tsp. pepper
2 cup shredded zucchini
1/2 cup shredded swiss cheese
Make paprika mixture by mixing paprika,
3/4 tsp. salt and the pepper. On wax paper,
make zucchini mixture by mixing zucchini,
cheese, chives, tarragon and 1/2 tsp salt.
Place all of the potato squares on a flat surface
and drizzle each one with melted butter.
Place half of the squares in a casserole dish butter side up.
Sprinkle each piece of the hash brown squares that are
in the casserole dish with a scant tsp. of the paprika mixture.
Spread zucchini mixture over the hash browns in the casserole.
Place the remaining hash brown squares butter side up on top.
Sprinkle remaining paprika mixture over each piece of hash brown.
Cover and bake at 400F about 45 minutes. Serves 6-8.
